Rigatoni Bolognese

makes 4 servings

1 1/2 lb Rigatoni pasta

3 oz carrots, diced

3 oz onions, diced

3 oz celery, diced

3 bay leaves

6 oz. ground veal

6 oz. ground pork

6 oz ground beef

8 oz Marinara sauce

8 oz demi glace

4 oz heavy cream

4 oz parmesan cheese

1 tbsp butter

Sautee carrots, onions and celery with a little bit of oil.  Add bay leaves.  Add veal, pork and beef and mix well.  Mix in the marinara sauce and demi glace.  Cook and reduce for 20 minutes.

After reducing, add the heavy cream, parmesan cheese and butter.

Put Rigatoni in 2 quarts of boiling water and cook for 2 minutes(if using Gaetano’s homemade Rigatoni)

Add to sauce and serve
