Mussels Primavera

Recipe of the Month 

Ingredients:

30   Mussels

1 tsp. extra olive oil

1 tbs. chopped garlic

2 oz. White Wine

16 oz clam juice

8 Artichoke Quarters

2 Fresh Plum Tomatoes (diced)

8 oz Julienne Spinach

1 Tbsp. Butter

Put all ingredients in a covered pot. As soon as mussels open the dish is done. Add salt, pepper and parsley.
